  • 4 tbsp whipping cream
  • 3 tbsp unsalted butter
  • 4 1/2 oz smoked salmon, sliced
  • 2 tsp finely chopped dill
  • 2 croissants

Step 1

Beat the eggs and cream together in a bowl. Season with salt and freshly ground black pepper.

Melt the butter in a nonstick skillet over low heat, then add the eggs. Using a flat-ended wooden spoon, push the mixture around until it starts to set, then add the salmon and dill. Continue to cook, gently folding the salmon and dill through the mixture until the eggs are mostly cooked and there is just a little liquid left in the pan. Serve croissants filled with eggs.
