- 1 1/2 tbsp olive oil
- 3 red onions, thickly sliced
- 1 large red bell pepper, sliced
- 3 tbsp balsamic vinegar
- 4 eggs
- 4 pieces lavash or other unleavened bread
- 4 tbsp sour cream
- sweet chili sauce, to serve

Step 1
Heat the olive oil in a nonstick skillet over medium heat and add the onions. Cook, stirring occasionally, until soft and translucent. Add the bell pepper and cook until soft. Increase the heat and stir for 1-2 minutes, or until they start to brown, then stir in the balsamic vinegar. Remove the mixture from the skillet and keep warm.
Carefully break the eggs into the skillet and keeping them separate, cook over low heat until they are just set.
Heat the lavash under a broiler for a few seconds. Spread 1 tbsp of sour cream onto the center of each piece of bread, then drizzle with some of the sweet chili sauce. Top with the onion and bell pepper mixture and an egg. Season with salt and pepper.
Fold in one short end of each piece of lavash, then roll up on lengthwise.
