  • 1 * 1 tablespoon olive oil
  • * Salt and pepper
  • Salsa
  • 1 * 1 cup olive oil
  • 1 * 1 cup fresh parsley
  • 1/2 * 1/2 cup fresh basil
  • 2 * 2 tablespoons herbes salées or salt (optional)
  • 1 * 1 teaspoon fresh thyme
  • 2 * 2 green onions

Grilled Halibut

1. Preheat the gas grill, setting the burners to high.
2. Alternatively, make a fire with about 10 logs, waiting until the logs have completely burned, leaving only hot coals.
Tips for Cooking on Coals
1. To start the fire, use about 3 logs and allow 30 minutes for the logs to catch fire.
2. Add 5 or 6 logs. After 2 more hours, you will have a nice bed of coals that will stay hot enough to cook on for about 1 hour.
3. For our menu, use the following cooking times: 10 minutes for the clams on very hot coals with a few flames still burning (plus 10 minutes for the sauce); 20 minutes for the corn; 30 minutes for the chicken; 40 minutes for the fish.
4. Bring fire thongs for moving the burning logs and a grill grate or oven rack.
5. If possible, use heavy-duty aluminum foil. Also, it’s always a good idea to use a double thickness of foil for this type of cooking.

Salsa

1. Place all the ingredients in a blender and purée until smooth. Served with the grilled halibut.
