Ingredients
- 1 large onion, diced
- 3 cloves of garlic, minced
- 3 carrots, diced
- 3 celery stalks, diced
- 2 lb chicken breasts
- 1- 28 ounce can diced tomatoes, drained
- 3 cups of chicken stock
- 1/4 cup hot sauce {I used Tabasco}
- salt and pepper to taste
- crumbled blue cheese for topping

Preparation
Step 1
place onions, garlic, carrots and celery in the bottom of the slow cooker
top with chicken, tomatoes, stock, and hot sauce
add 1 tsp salt and 1/4 tsp pepper, stir
cover and cook on low 6 hours
shred chicken and return to chili
season to taste
serve with extra hot sauce and blue cheese crumbles
