Ingredients
- 1 mango chopped
- 1 small cucumber diced
- 1/4 red onion diced
- 1 red pepper diced
- 3 cloves garlic minced
- 2 jalapeno peppers chopped
- 1 - 15 oz. can black beans rinsed
- 1 - 17 oz. can corn rinsed
- Juice of 3 limes
- 1/4 cup red wine vinegar
- 1/4 cup water
- 1/4 olive oil
- To taste add cumin, salt, pepper and Italian seasoning

Step 1
Combine all vegetables, corn and beans in a bowl. In another bowl combine remaining ingredients, season to taste and pour over vegetables. Let marinade in refrigerator overnight. Serve with tortilla chips or as a topping on salads.
