Ingredients
- 2 egg whites
- 1 cup brown sugar
- 1 cup chopped pecans
- 1 teaspoon vanilla

Step 1
1. Beat egg whites until stiff. Add sugar slowly, and beat until very stiff. Add vanilla and mix well. Fold in pecans by hand.
2. Drop onto lightly greased cookie sheets and bake for 45 minutes in 250 degree oven. Store in tightly sealed container.
Notes: These were just delightful. Tasted like roasted marshmallows. Easy and not bad for you for a cookie - among my personal favorite cookie recipes. Cut sugar down by about 1/4 cup.
