It's pancake day! The one, eagerly-awaited day of the year that we get to stuff our faces with pancake batter and maple syrup-smothered goodness without the slightest twinge of guilt. And to celebrate, tonight I'll be having a pancake-themed feast of these banana-flavoured bad boys. They're a fun twist on the plain pancake batter, but the flavour's still subtle enough that you can smother them in chocolate spread, syrup, or whatever other toppings take your fancy.

Ingredients

  • 125 g plain flour
  • 15 g sugar
  • 1 egg
  • 2 ripe bananas
  • 30 ml vegetable oil
  • 235 ml milk
  • 1 tsp baking powder
  • 1 tsp vanilla flavouring
  • Pinch salt

Preparation

Step 1

1. Sieve your flour into a bowl. Add your sugar, baking powder and salt. In a separate bowl, squish your bananas to a pulp with a fork, then mix in the vanilla, milk, oil and egg.

2. Stir the flour mixture into the banana mixture. The batter will probably look a bit lumpy; this is normal, so don't stress!

3. Heat oil in a frying pan until hot, and add enough batter to coat the bottom of the pan. Cook until bubbles start to form and then flip and cook again until golden brown on both sides. Repeat until the batter's all gone and you've got an entire stack. Get creative with your toppings, then tuck in!
