Ingredients
- 1-1/2 Lbs. Beef for Stew [Certified Angus Beef Round Cubes, Boneless]
- 1/2 Cup Chopped Onion
- 1/2 Cup Chopped Green Pepper
- 1/2 Cup Sliced Celery
- 1 Can [10.5 oz] Condensed Beef Broth, Undiluted
- 1 Can [8 oz.] Tomato Sauce
- 1 Tablespoon Chopped Parsley
- 1/2 Clove Garlic, Finely Chopped
- 1/2 Tablesppon Salt
- 1/8 Tsp. Pepper
- 1/8 Tsp. Dried Thyme Leaves
- 1 Bay Leaf
- 3 Small Potatoes
- 6 Medium Carrots
- Peas

Step 1
Brown meat in hot oil. Remove meat after browning. Add onion, green pepper, and celery & saute (8 mins.). Return beef to pan. Add 1/2 Cup Water, Beef Broth, Tomato Sauce, Parsley, Garlic, Salt & Pepper, Thyme and Bay Leaf. Bring to a boil. Reduce heat, simmer covered, stirring several times, 1-1/4 hrs. Add potatoes, carrots and simmer covered 1 hr. longer. Add peas last 5 minutes of cooking.
Remove from heat, skim off fat if any. Add 2 tbsps flour to 2 tblsps to water and mix, then add in to stew. Cook 10 more imnutes
