Banana Graham Muffins

Ingredients
- 2 cups graham cracker crumbs
- 1 3/4 cups all-purpose flour
- 1/3 cup firmly packed light brown sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup mashed banana
- 1 1/4 cups skim milk
- 1/2 cup applesauce
- 1 egg
- 1/2 tsp vanilla
- 1/2 cup chopped pecans, optional

Preparation
Step 1
1. Preheat oven to 400. Line 16 muffin cups w/paper lines or spray with cooking spray
2. In lg bowl, combine graham crumbs, flour, brown sugar, baking powder and salt
3. In med bowl, whisk together bananas, milk, applesauce, egg and vanilla
4. Stir applesauce mixture into flour mixture just until moist. Fold in pecans if desired. Spoon evenly into prepared muffin cups.
5. Bake 20-25 min or until tester tests clean. Immediately remove from pan, cool on wire rack.
Notes: made these for Macy, and didn't taste them, so can't really judge, but she liked them
