Ingredients
- 1 1/4 cups flour
- 1/2 cup cornmeal
- 1/3 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground ginger
- 1 3/4 cup apple, shredded
- 3/4 cup lowfat buttermilk
- 2 tablespoons vegetable oil
- 1 large egg, slightly beaten
- 2 teaspoons sugar
- 1/4 teaspoon cinnamon

Preparation
Step 1
1. Heat oven to 400.
2. Combine first 8 ingredients in a large bowl. Make a well in the center of the mixture.
3. Combine apples, buttermilk, oil and egg in a bowl. Stir well. Add to dry ingredient, stirring just until moist. Divide batter evenly amonst 12 muffin cups coated with cooking spray.
4. Combine last two ingredients and sprinkle on muffins.
5. Bake for 20 minutes or until golden. Remove from pans immediately.
