Ingredients

  • 1/4 cup salted, roasted cashews
  • 1 Tbsp. oil
  • 1 onion, chopped, 1 cup
  • 2 cloves garlic, minced
  • 1/2 tsp. salt
  • 1 cup uncooked rice
  • 1 can (14.5 oz) lower sodium chicken broth
  • 1 scallion, thinly sliced
  • 2 Tbsp. chopped fresh cilantro

Step 1

Heat large nonstick skillet over medium-high heat.

Add cashews. Cook, stirring occasionally, until lightly browned, 1-2 minutes; remove from skillet.

In same skillet, heat oil over medium heat. Add onion, garlic and salt; cook, stirring occasionally, until just softened, 2-3 minutes. Stir in rice until coated. Add broth and 1/4 cup water; bring to boil.

Cover pot; cook until water is absorbed and rice is tender, about 20 minutes. Stir in scallion and cilantro. Transfer to serving bowl; sprinkle with cashews.
