Ingredients
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 zucchini, diced
- Salt and pepper
- 1 can diced tomatoes, 14.5 oz drained
- 3 1/2 to 4 cups chicken or vegetable broth
- 1 cup water
- Juice of 1 lime
- 2 packages (3 ounces each) ramen, discard the seasoning packet
- Sriracha sauce to taste, optional
- 1 handful cilantro, chopped
- 4 green onions, chopped

Preparation
Step 1
In a large pot, heat the olive oil over medium. Add the onion, carrots, celery and zucchini; sauté until soft, about 6 minutes. Season with salt and pepper. Add the tomatoes, broth, water and lime juice; bring to a boil. Add the ramen, reduce heat and simmer until noodles are tender, 3 minutes. Season with salt, pepper and Sriracha sauce if desired. Serve immediately and top bowls with cilantro and chopped green onions.
