Ingredients

  • For dough:
  • 2 T unsalted butter, softened
  • 3/4 C warm milk (110 F)
  • 1/2 C warm water (110 F)
  • 2 T unsalted butter, melted
  • 1/4 C sugar
  • 1 egg, lightly beaten
  • 1 package rapid rise yeast
  • 3 1/4 C flour, plus more for dusting
  • 2 t salt
  • For sugar coating:
  • 1 C brown sugar
  • 2 t cinnamon
  • 8 T unsalted butter, melted
  • For glaze:
  • 4 T unsalted butter
  • 1/2 C brown sugar
  • 1/4 C maple sugar
  • 1 t cinnamon
  • 1 T water

Preparation

Step 1

Have all ingredients at room temperature. Butter the monkey bread baking mold w/ the softened butter.
To make dough: In a small bowl, whisk together the milk, water, melted butter, sugar, egg and yeast.
In the bowl of an electric mixer fitted w/ the dough hook, combine the flour and salt and beat on low speed just til combined. Slowly add the milk mixture and beat til the dough comes together, 1-2 mins. Increase speed and beat til dough is shiny and smooth, 5-6 mins.
Turn dough out onto a lightly floured surface and knead til smooth, about 1 min. Form the dough into a ball. Coat the inside of a lg bowl w/ PAM. Cover the bowl w/ plastic wrap and let stand in a warm place til doubled, about 1 hour.
Meanwhile, prepare the sugar coating: In a bowl, stir together the brown sugar and cinnamon. Put the melted butter in another bowl, set aside.
Turn the dough out onto a floured surface and shape into a 8" square. Cut dough into 6 equal strips, then cut each piece crosswise into 8 pieces to form a total of 48 pieces. roll each piece into a ball, dip into the melted butter and roll in brown sugar mix. Stack balls in the prepared pan. Cover w/ plastic wrap and let rise in a warm place. (45 mins) Do not let the dough rise over the top of pan.
Position rack in lower third of oven and place pan on alum. foil Bake at 350 (remove plastic wrap before baking) Bake for 20 mins. then cover top of pan losely w/ foil and continue to bake til top is golden brown and the center edge of the bread, next to the tube springs back when touched, 25 mins longer.
Meanwhile, make the glaze: In a saucepan, mix butter, brown sugar, syrup and cinnamon and water. Whisk til dissolved. Bring to boil and boil for 1 min. Remove from heat and cover to keep warm. Transfer pan to wire rack and let cool for 5 mins. Turn bread out onto a plate and let cool 10 mins. Using a spoon, drizzle w/ warm glaze over the top and sides of bread. Let the glaze set about 10 mins. Serve warm.
