KALE****King of Greens Salad

04/10/14 - This was very good for both of us. Dan complimented it and liked the pine nuts. I used two heads of organic Lacinto kale, which resulted in 4 to 5 servings.

19/12/14 - Update - I used a package of the pre-washed, baby kale. It was great again and although it needed a bit more massage, I didn't have to clean it and rip it into pieces (although I did give it a rinse the day before and spin it dry) fair trade-off. This method makes 4 servings.

15/03/15-UPDATE - added 4 oz. poached chicken and a handful of Quinoa Crispies and made it a meal.

Ingredients

  • 4 servings
  • 1 container PC baby kale or 1 large bunch Black Kale (leaves torn into bite size pieces)
  • 3 tablespoons Olive Oil
  • 1/2 to 1 Lemon
  • 3 tablespoons Currants (1 1/2 ounces)
  • 3 tablespoons toasted Pine Nuts ()
  • 20 grams freshly grated Pecorino or Parmigiano
  • 1 teaspoon Red Chili Flakes
  • Salt and Pepper

Preparation

Step 1

Separate the leaves of the kale and remove the ribs. Tear the leaves into bite-sized pieces into the strainer section of the salad spinner. Immerse in water, swishing to wash the leaves and allow to soak for half an hour or so. Spin the leaves several times until as dry as possible. Wrap in a tea towel and put in a bowl or a ziplock bag (depending upon when you are eating it) and refrigerate until serving time.

Add the kale to a large mixing bowl, season with salt and pepper and drizzle with olive oil. Massage with your hands making sure to coat the kale with oil and begin to break down the cell structure. (Doesn't take long, maybe 2 or 3 minutes)

Grate the zest and squeeze the juice of the lemon over the massaged kale, tasting after the first half of lemon juice. Add the currants, toasted pine nuts, chili flakes and cheese and toss to combine.
