Always read a recipe through...even when you think you remember it! I ruined a perfectly good roast by neglecting to turn off the oven.

Ingredients

  • spice rub:
  • 1 (3 pound) beef eye of round
  • 1 T sea salt
  • 1 tsp pepper
  • 1 T onion powder
  • 1 T garlic powder
  • 1 T paprika
  • 1 tsp chili powder
  • 2 tsp oregano

Preparation

Step 1

Directions:
-Mix spice rub ingredients in a zip loc bag, put roast in bag and let it hang out in the refrigerator. The longer the better, but at least an hour.
-Let roast sit at room temperature for a half hour.
-Preheat the oven to 500 degrees F, but reduce to 475 as soon as you put the roast in the oven.
-Do not cover or add water.
- Place roast in preheated oven, be sure to reduce heat to 475.
-Roast for 21 minutes (seven minutes per pound) then TURN OFF OVEN.
-Let the roast sit in the hot oven for 2 1/2 hours. Do not open the door at all during this time!
-Remove the roast from the oven, the internal temperature should have reached at least 145 degrees.
-Carve into thin slices to serve.
