Ingredients
- 1 kg small squid, cleaned tentacles cut off, chopped and reserved
- 2 Tbsp olive oil
- 1/2 a small onion, finely chopped
- squid tentacles, (see above)
- 3 plum tomatoes,
- 2 cloves of garlic, crushed
- 2 Tbsp parsley, chopped
- 1 Tbsp herb mix (basil, thyme, oregano, etc), chopped
- 300 ml white wine
- 1 egg
- panko breadcrumbs
- 1 tsp chili powder

Step 1
Clean & prep squid.
Prepare stuffing by mixing olive oil, onion, finely chopped
squid tentacles, tomatoes, garlic, wine & herbs.
Mix breadcrumbs and chili powder and stuff squid and dip in egg and crumb-chili mixture. Pan fry lightly in oil.
Serve immediately garnished with capers. Serve with Lemon Aioli.
