Ingredients

  • 1 c whole-grain bulgur
  • 1 bunch watercress, thick stems removed
  • 1 15-oz can butter, cannellini, or corona beans, rinsed
  • 4 small seedless cucumbers or 1 lg English cucumber, cut into 1" pieces
  • 1/2 c pitted green olives, halved
  • 1/4 small red onion, sliced
  • 1/4 c EVOO, plus more for serving
  • 1/4 c fresh lemon juice
  • Kosher salt & black pepper
  • 1/2 lb fresh mozzarella, torn into pieces

Preparation

Step 1

1. Cook the bulgur according to the package directions.
2. Combine the bulgur, watercress, beans, cucumbers, olives, onion, oil, lemon juice, 3/4t salt, & 1/2t pepper in a large bowl.
3. Serve topped w/ mozzarella & drizzled w/more oil.
