Summery Greek Salad with Bulgur and Mozzarella
Bulgur is a quick-cooking whole grain. Because it still has some of the bran (the outer part of the wheat kernel) attached, it has a delicious nutty flavor and is rich in iron, as well as being naturally low in fat and high in fiber.

Ingredients
- 1 c whole-grain bulgur
- 1 bunch watercress, thick stems removed
- 1 15-oz can butter, cannellini, or corona beans, rinsed
- 4 small seedless cucumbers or 1 lg English cucumber, cut into 1" pieces
- 1/2 c pitted green olives, halved
- 1/4 small red onion, sliced
- 1/4 c EVOO, plus more for serving
- 1/4 c fresh lemon juice
- Kosher salt & black pepper
- 1/2 lb fresh mozzarella, torn into pieces

Preparation
Step 1
1. Cook the bulgur according to the package directions.
2. Combine the bulgur, watercress, beans, cucumbers, olives, onion, oil, lemon juice, 3/4t salt, & 1/2t pepper in a large bowl.
3. Serve topped w/ mozzarella & drizzled w/more oil.
