Ingredients

  • 1/2 cup creamy peanut butter
  • 1/2 cup butter or margarine (I use "I can't believe it's not butter light)
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 3/4 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Decorative toppings as desired. (Frosting, candies, jimmies, etc)

Preparation

Step 1

Preheat oven to 375 degrees.

Beat peanut butter, butter, both sugars, and vanilla in large bowl with electric mixer on medium speed until smooth. Beat in remaining ingredients until blended. Divide dough in half. On well floured surface roll each half out to about 1/8 inch thick. Make sure to flour rolling pin.

Cut dough into shapes and arrange on ungreased cookie sheets. Bake 7 to 9 minutes or until lightly golden. Cool completely on wire racks then decorate as desired.
