Ingredients

  • Sauce:
  • 2 TBS Butter
  • 1 bunch green oions, diced
  • 1 medium sweet yellow pepper
  • 1 clove garlic minced
  • 2 - 3 fresh jalapeno peppers, seeded and chopped
  • 1/2 tsp salt
  • 1/2 tsp ginger
  • 1/2 tsp sage
  • 1/2 tsp cumin
  • 2 boneless chicken brests cut into pieces
  • 2 TBS Butter
  • 1/4 Cup flour
  • 1/2 cup half & half (i use fat free)
  • 2 cups chicken broth
  • 1 small can corn, drained
  • 1 jar (3 lbs) great northern beans

Preparation

Step 1

To make chicken mixture melt butter in a 5 qt pan. Saute green onions, yellow pepper, garlic, jalapenos, gingerm salt, sage and cumin. Add chicken and cook until just done. Do not overcook. Remove chicken mixture from pan and set aside.

For sauce, melt 2 TBS butter in same pan. When bubbling add flour and whisk briskly while adding cream. When smooth aand thick, add chicken broth,. Stir until blended,. Stir in corn, beans and chicken mixture and simmer 30 miuntes or longer.

If desired, sprinkle with grated monterey jack cheese.
