Ingredients

  • 3-4 Bell Peppers, any color, roasted, peeled and cut in 4-5 cm slices
  • 1/4 cup pine nutes
  • 1/4 cup raisins
  • 1/3 cup capers
  • 1/4 cup anchovy
  • 1/4 cup parsley, fresh, chopped
  • 1 egg
  • 1/2 cup Italian breadcrumbs
  • salt and pepper to taste

Preparation

Step 1

Preheat oven to 375 degrees.

Roast peppers for 20 minutes. Turning the peppers from time to time during roasting. Cool peppers, remove the skin and cut into 4-5 cm slices.

Chop anchovies, place in a bowl with the pine nuts, raisins and capers. Mix well. Add the breadcrumbs, egg and parsley. Add salt and pepper and mix well.

Lay the pepper slice flat and "fill" the slices with the mixture. Roll them up into a "wheel" and close with a toothpick to keep from unrolling.

Bake another 15-20 minutes at 375, until golden and serve.
