Vanilla Cream Caramels

Ingredients
- 2 cups sugar
- 2 cups dark corn syrup
- 1 cup butter
- 2 cups cream

Step 1
1. Stir together first three ingredients and one cup of the cream.
2. Cook over moderate heat, stirring constanty, to 240 degrees.
3. Remove from heat and add very gradually add the other cup of cream.
4. Return to heat and cook to between 244 and 246 degrees. Pour at once, without stirring, into a 9x12 buttered pan.
5. When firm, about three hours later, invert onto a board and cut into squares.
