Ingredients

  • 2 (8 oz) center cut salmon fillets with skin
  • 1/4 t kosher salt
  • 1 t vegetable oil
  • 1 clove garlic, sliced
  • 1 T chopped fresh tarragon
  • 1 T chopped fresh flat leaf parsley
  • 3 T mayonnaise
  • 1 t Dijon mustard
  • 1 t fresh lemon juice
  • 1 pinch cayenne pepper

Preparation

Step 1

Season salmon fillets with kosher salt. Line a baking sheet with foil & brush lightly with oil.

Preheat oven’s broiler on high & set oven rack about 8 inches from heat source.

Process garlic, tarragon & parsley ( or other herbs) in a blender or mortar & pestle to form a loose paste.

Mix mayo, mustard, lemon juice & cayenne pepper into garlic paste until combined.

Place salmon fillets skin side down on baking sheet. Spoon herb spread over top & sides of each fillet.

Cook under preheated broiler until fillets are well browned, about 5 min. Turn the broiler off & turn oven to 350 degrees.

Bake until internal temperature of salmon is 130 degrees & salmon flakes easily with cork, about 3-4 min.
