Ingredients
- Filling:
- Chicken thigh meat cooked
- ginger root
- garlic
- salt
- white pepper
- wonton wrappers (square)
- Flour/water paste (equal partsflour and water)
- Sauce:
- vegtable oil
- chilli paste
- green onion
- serrano peppers

Step 1
Chop filling ingredients very finely. Use a blender for the garlic and ginger. Mix it all together to make a paste. Lay the thawed wonton wrappers on a cutting board. place a tablespoon in the center of each wrapper and pinch the wrapper together, sealing with the the water/flour paste. Allow them to set in the fridge for a few hours so they don't fall apart when cooking.
To cook: Place the wontons in simmering water for about 30 -45 seconds and allow them to drain well. Meanwhile place a tablespoon of vegetable oil in a wok or fry pan over medium heat. Add the remaining sauce ingredients and allow to brown slightly. Add teh wontons to the hot sauce and toss gently to coat. Plate and serve.
