Ingredients
- 1 cup all-purpose flour
- 1 1/2 Tbls cocoa powder
- 1 tsp baking powder
- 1/2 tsp salt
- 3 Tbls sugar
- 1 cup buttermilk
- 1 Tbls vinegar
- 1 egg
- 1 tsp vanilla
- 1 tsp red food coloring
- 2/3 cup white chocolate chips

- Cream Cheese Glaze
- 3 oz cream cheese, softened
- 3 Tbls butter, softened
- 1 cup powdered sugar
- 1/2 tsp vanilla
- 1/3 cup milk (approx)

Step 1
Preheat electric griddle or a large skillet to medium heat.
In a large bowl mix together flour, cocoa powder, baking powder, salt, and sugar.
In a large measuring cup mix together buttermilk, egg, vanilla, and vinegar. Add food coloring, and stir until combined.
Pour into flour mixture, and stir until just combined.
Fold in chocolate chips.
Scoop about ¼ cup of batter onto a hot skillet. Cook for 2-3 minutes, until lots of tiny bubbles appear on the surface. Flip, and cook for an additional 2 minutes. Serve immediately.
To prepare the cream cheese glaze; In the bowl of an electric mixer, blend cream cheese and butter together until fluffy (about 2 minutes). Add sugar, vanilla and milk. Mix until well combined and the desired consistency. Use additional milk if necessary.
