Banana Bread Muffins with Cinnamon Streusel

Ingredients
- Cinnamon Streusel:
- 1 cup brown sugar
- 1/2 cup pecans, chopped
- 1/2 cup sifted all purpose flour
- 1/4 cup butter, room temperature
- 1 Tablespoon cinnamon
- Muffins:
- 2 cups all purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup sugar
- 1/4 cup butter, softened
- 2 large eggs
- 1 1/2 cups mashed ripe banana, about 3 bananas
- 1/3 cup plaini vanilla
- 1 teaspoon vanilla extract

Preparation
Step 1
1. In a mixing bowl, stir all the streusel ingredients together. Set aside.
2. Preheat oven to 350 degrees. Line two 12 cup muffin tins with baking liners
3. Mix flour, baking soda and salt in a small bowl and stir well
4. Place sugar and butter in the bowl of a stand mixer and beat at medium speed until well blended.
5. Add the eggs one at a time, beating well after each addition.
6. Add banana, yogurt, and vanilla. Beat until blended.
7. Mix in the flour mixture, a little at a time, just until incorporated.
8. Divide batter among muffin cups. Top the muffin batter with cinnamon streusel.
9. Bake about 30-40 minutes or until a toothpick inserted into center comes out clean.
10. Cool 10 minutes in pan and then remove from pan. Cool on rack.
