Ricotta Gnocci

Ingredients
- 1/2 lb Mozzarella cheese
- 1 large handful of parsley
- 2 large cloves of garlic, minced
- 1 lb ricotta (lowfat ok)
- 2 eggs
- 1/2 tsp salt
- 1/3 cup Parmesan
- black pepper to taste
- 1 1/4 cups flour
- optional: extra parmesan

Step 1
1. Fill a large kettle with water and put it up to boil
2. Meanwhile, grate mozzarella and transfer to a medium sized bowl.
3. Mince parley and garlic and stir into grated cheese
4. Beat together the ricotta and eggs. Add to first mixture, along with salt, pamesan, black pepper and flour
5. When the water boils, reduce heat to a simmer and drop in small globs of batter by the Tbsp. Simmer for 15 minutes then remove with a slotted spoon. They will be soft. Refrigerate until about 15 minutes before serving.
6 Shortly before serving, heat the broiler. Sprinkle the tops of the gnocci with a little extra parmesan and place in oven. Broil until golden and serve hot
