Preparation
Step 1
Batter-
Mix all ingredients in a bowl until everything is evenly mixed. Should be just thick enough to coat spoon. Cover and let sit in fridge for atleast 2 hours.
Take out of fridge mix again so that all chunks of flour are gone. If, after you’ve made first crepe, the crepe is too thick, add a little more water (tb at a time) to thin the batter.
Making Crepes-
Grease (with Oil/Butter) and Heat up a 6-8 inch pan/skillet on medium high heat. Once the oil begins to smoke add just enough batter to coat the bottom of the pan, tilting pan to move batter around and fully coat bottom.
Cook for 60 seconds and flick pan to loosen crepe. Flip the crepe and cook for another 30 or 40 seconds. You are done. Put on a plate and add fillings.
Cooking time and temperature really depends on your burner and pan so adjust accordingly. Make sure crepe is evenly cooked and a light brown on both sides.
Once you get the hang of it, you can cook about 8 or so in about 15 minutes! You don’t have to grease everytime, just as needed.
