Ingredients
- 1 c milk
- 1/3 cup yellow cornmeal
- 1/2 tsp salt
- 1-1/2 c shredded Cheddar cheese, divided
- 1 c canned corn, drained
- 1/2 c chopped green onion
- 2 Tbsp butter
- 1/8 tsp ground red pepper
- 2 large eggs

Preparation
Step 1
Preheat oven to 400º.
In a medium saucepan, combine milk, cornmeal, and salt. Cook over medium-high heat, stirring constantly, until mixture is thickened, about 5 minutes.
Stir in 1 cup cheese, corn, green onion, butter and red pepper. Add eggs, stirring until combined.
Pour mixture into a 1-quart baking dish, and sprinkle with remaining 1/2 c cheese.
Bake for 25-30 minutes or until center is set and cheese is lightly browned.
Serve immediately.
