Ingredients
- 1 small onion
- 1 tablespoon butter
- 3/4 cup au jus (use beef stock diluted)
- 2 small (6-inch) sandwich rolls
- 4 ounces sliced good-quality roast beef
- 2 ounces thinly sliced provolone cheese
- (NOTE: For 4 servings, we used 1 lb roast beef in total)

Step 1
Peel and thinly slice onion and separate into rings. Melt butter into large skillet over medium heat. Add onion, saute until light brown, about 3 minutes. Add 1/4 cup au jus. Place roast beef slices in pan in a single layer and eat just until they brown, 1-2 minutes. Pour remaining au jus into a microwave-safe bowl and heat for about 30 seconds in the microwave. Slice rolls and heat them in the microwave for 10 to 15 seconds. Place provolone slices on warmed rolls, then top with hot beef and onions. Serve with the warmed au jus for dipping.
