SWEET POTATO CASSEROLE

Ingredients

• Topping:
• 3 cups cooked mashed sweet potatoes
• 2 eggs slightly beaten
• 1/2 cup melted margarine
• 3/4 cup light brown sugar
• 1 teaspoon vanilla or lemon flavor
• 1/2 cup milk
• 1 teaspoon cinnamon
• 1 cup light brown sugar
• 1/3 cup flour
• 1 cup chopped pecans
• 1/4 cup melted margarine

Preparation

Step 1

Mix with hand mixer the potatoes, eggs, margarine, sugar, vanilla, and milk, pour into buttered 2-1/2 quart casserole dish.

Stir topping ingredients together in a small bowl and crumble on top of potato mixture. Bake at 350 degrees for 35 minutes.
