Ingredients

  • Cake:
  • 1 1/2 cups of sugar
  • 1 1/2 cups of canola oil or vegetable
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 1/2 cups of cake flour
  • 1 tbsp of cocoa powder
  • 1 tsp baking powder
  • 1 cup buttermilk
  • 2 oz of red food coloring (small bottle)
  • 1 tsp white vinegar
  • FROSTING:
  • 8 oz of cream cheese
  • 6 tbsp of softened butter (room temperature)
  • 1 tsp vanilla extract
  • 3 cups sifted confectioners’ sugar (powder sugar)

Preparation

Step 1

CAKE:

Grease 2 9-inch cake pans. Preheat oven to 350. Whisk the sugar, oil, eggs, and vanilla in a bowl together. Sift flour, cocoa powder, and baking soda over the egg mixture. Add buttermilk and stir to combine. Add the food coloring and vinegar and stir. Pour the batter into the prepared pans and bake for about 30 minutes or until a toothpick is inserted into the center and it comes out clean. Let the cake cool completely before icing.

FROSTING:

Combine all ingredients in a bowl and cream together*
