Irresistible Peanut Butter Cookies

Ingredients
- 1-1/4 cups firmly packed brown sugar
- 3/4 cup crunchy peanut butter
- 1/2 cup butter flavored Crisco
- 3 Tbsp. milk
- 1 Tbsp. vanilla
- 1 egg
- 1-3/4 cup AP flour
- 3/4 tsp. salt
- 3/4 tsp. baking soda

Step 1
1. Heat oven to 375. Combine brown sugar, peanut butter, shortening, milk and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Add egg. Beat just until blended.
2. Combine flour, salt and baking soda. Add this to creamed mixture at low speed and mix just until blended.
3. Drop by heaping teaspoonfuls (I use PC tablespoon scoop) of dough 2 inches apart onto ungreased baking sheet. Flatten slightly in crisscross pattern with tines of fork.
4. Bake one baking sheet at a time for 7 to 8 minutes, or until set and just beginning to brown. (this takes 11 min or so with my larger cookies) DO NOT OVERBAKE. Cool 2 minutes on baking sheet. Remove cookies onto foil sheets to cool completely.
Makes about 3 dozen cookies
