Cheese and Herb Corn Bread with Scrambled Eggs 1 Picture

Ingredients

  • Cornbread:
  • 1 and 1/4 cups self-raising flour
  • 1 tbsp castor sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 3/4 cup polenta
  • 1/2 cup grated cheese, gouda or cheddar
  • 1 handful chopped mixed herbs – chives, sweet basil and parsley
  • 2 eggs
  • 1 cup buttermilk
  • 4 tbsp olive oil
  • Eggs:
  • 6 eggs
  • 1/2 cup whipping cream
  • sea salt and fresh ground pepper, to taste

Preparation

Step 1

Preheat the oven to 350F.

Grease a 8 x 4 inch loaf pan.

Sift the flour, sugar, baking powder and salt.

Mix in the rest of the ingredients, be sure to add 1 egg at a time, and half the buttermilk first.

Spoon into the pan, and bake for 45 minutes, or until a knife comes out clean.

To make the eggs, mix together eggs and cream, then season. Pour into skillet and cook until done.

Serve bread with scrambled eggs, dusted with black pepper and chives.
