- 2 pieces pita bread
- 2 tbsp olive oil
- 1/4 cup finely grated Parmesan cheese
- 1/4 cup plus 2 tbsp butter
- 4 scallions, sliced
- 1 3/4 lb mixed mushrooms
- 1 tbsp chevril leaves

Step 1
Preheat the oven to 350F. Cut the pita into 1 1/4 inch wide strips and brush lightly with 1 tbsp of the oil. Sprinkle with the cheese and bake for 10 minutes, or until crispy.
Heat the butter and the remaining oil in a large skillet until sizzling. Add the scallion and the bigger mushrooms (like portobello, if using) and cook over medium heat until tender. Add the smaller mushrooms and cook until the liquid has evaporated. Remove from the heat and stir in enoki mushrooms.
Arrange the toasted pita chips into an interlocking square. Pile the mushrooms in the center, top with chevril, and serve.
