Salmon, Dill, and Camembert Frittata 1 Picture

  • 12 eggs
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups whipping cream
  • 6 scallions, sliced
  • 8 oz smoked salmon
  • 1/4 cup chopped fresh dill
  • 4 oz Camembert cheese, sliced

Preparation

Step 1

Preheat oven to 350F. Lightly grease and line a 9 inch springform pan. Lightly beat the eggs, parmesan, and cream, and stir in the scallions. Thinly slice most of the smoked salmon and add it to the egg mixture, leaving a bit for garnish. Add the chopped dill. Pour the mixture into the pan and place the pan on a baking sheet. Bake for 50-60 minutes, or until set.

Allow to cool slightly before removing from the pan. Arrange the remaining smoked salmon and all of the sliced camembert decoratively in the center of the frittata. Sprinkle with lemon zest and serve with dill sprigs.
