Favourite Lemon Loaf

Ingredients
- Glaze:
- 2 C all-purpose flour
- 1 1/4 tsp baking powder
- 1/2 tsp salt
- 1/2 C butter, softened
- 1 C sugar
- 3 large eggs
- 1/2 C milk
- 1 1/2 T grated lemon zest
- 1/4 C lemon juice
- 1/4 C icing sugar

Preparation
Step 1
Measure first 3 ingredients into medium bowl. Stir; set aside.
Cream butter and sugar in large bowl. Add eggs 1 at a time, beating well after each addition.
Add flour mixture in 3 parts, alternating with milk in 2 parts, stirring after each addition until just combined. Add lemon zest. Stir until just combined. Spread in greased 9x5x3 loaf pan. Bake in 325F oven for about 1 hour until wooden pick inserted in centre comes out clean.
Glaze: Stir lemon juice into icing sugar in small bowl until smooth. Randomly poke several holes in loaf with wooden pick. Spoon over hot loaf. Let stand in pan until cooled completely.
Lemon Blueberry Loaf: Fold in 1 C fresh or frozen blueberries when adding zest until just combined. Bake as directed for 60-65 minutes.
Lemon Poppy Seed Loaf: Add 2 T poppy seeds to flour mixture.
