Ingredients

  • Mushroom Sauce:
  • 1 (3 lb.) pot roast
  • 1/4 cup white wine
  • 2 tablespoons salad oil
  • 2 tablespoons vinegar
  • 1/2 cup chopped onion
  • 1 clove garlic minced
  • 2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons bacon fat
  • 2 (8 oz.) cans tomato sauce
  • 1 box mushrooms
  • 1 medium onion, chopped
  • 1 clove garlic minced
  • 1/4 cup butter or margarine
  • 2 tablespoons white wine

Step 1

Mix all ingredients except meat, fat and tomato sauce. Place meat in shallow bowl and cover with marinade. Let stand 2 hours. Lift out meat. Keep marinade.

Brown meat in hot fat. Place in shallow baking pan. Cover with marinade and tomato sauce. Cook uncovered in 325 degree oven for 2 hours, or until tender. Turn after first hour.

Wash mushrooms, saute onions and garlic in butter until soft. Add mushrooms. Cook over low heat until brown. Add wine and heat for two minutes. Add to meat casserole during last half hour of cooking time.
