Ingredients
- 1/4 C flour
- salt and pepper
- oregano
- 4 chicken breasts boneless
- 4 T butter, unsalted
- 2 T olive oil
- 1/2 pound mushroom
- 1/2 C marsala wine
- 1/4 C sherry
- 1/2 C Italian parsley

Preparation
Step 1
Mix flour and oregano. Season chicken with salt & pepper. Coat chicken in flour mixture.
Melt butter and oil. Place chicken in pan and cook each side till brown. Finish chicken in oven at 350 till internal temp is 165.
Scrape up brown bits. Add butter and saute mushrooms. Pour in wine and sherry and cook sauce until reduced and thickened. Use slurry of corn starch and water to thicken. Garnish with parsley.
