Pork and Beans Bread

Ingredients
- 15 oz can pork and beans
- 4 eggs, beaten
- 1 cup vegetable oil (not canola or olive oil)
- 1 tsp vanilla
- 2 cups sugar
- 1 tsp baking soda
- 1/2 tsp each baking powder and salt
- 1 1/2 tsp cinnamon
- 1 cup chopped pecans or walnuts
- 3 cups flour

Preparation
Step 1
Spray two loaf pans (9x5x3) with Pam.
Pour pork and beans with juice into food processor or blender. Process until pureed smooth. Place beaten eggs into large mixing bowl; add pork and beans and mix well. Add vegetable oil and vanilla. Mix well. Add sugar and mix well. Then mix in baking soda, baking powder, salt and cinnamon. Stir until everything is incorporated. Stir in chopped nuts. Add flour in 1 cup increments, stirring after each addition. Now your're ready to spoon batter equally into the prepared loaf pans.
Bake at 350 for 50-60 minutes. Test with cake tester. When done, remove pans to wire rack to cool for 20 minutes. May need to run a knife around the edges of pan to loosen the bread before removing from pans. Let loaves finish cooling on wire rack. Cool completely then wrap in plastic wrap or foil. Can freeze up to three months.
