Ingredients
- Turkey carcass
- 8 cups water
- 1 medium onion, quartered
- 1 tsp. thyme
- 1 bay leaf
- 4-5 celery sticks
- 2 tbsp. salt
- 1/2 tsp pepper

Preparation
Step 1
Cover carcass with all ingredients in large soup pot. Bring to a boil an simmer for 2 hours. Strain liquid after simmereing and add rice, potato, carrot, etc if desired and cook until vegetables are soft.
