Herbed Rib Roast

Ingredients
- 7-8 lb prime rib (3 - 4 ribs)
- 1 T whole black peppercorns
- 2 bay leaves (not California)
- 1 T kosher salt
- 3 garlic cloves
- 1 tsp freshly chopped thyme
- 1 tsp freshly chopped rosemary
- 1 T olive oil

Step 1
Grind the peppercorns and bayleaves with the salt to a powder in an electric grinder then transfer to mortar. Add garlic and herbs and crush into a paste with pestle. Rub paste over the entire roast. Marinate covered in refrigerator overnight. Transfer roast to rack in pan.
Let roast stand at room temp for about an hour.
Preheat oven to 450 degrees.
Roast in middle of oven for 20 minutes. Reduce temp to 350 degrees and roast till thermometer registers 110 degrees (1 1/2-3/4 hrs.) Transfer to platter and let stand uncovered for 25 minutes. Meat will continue to cook reaching 130 degrees for medium rare.
