Nanaimo Mini Bites

If you love classic Canadian Nanaimo bars, get ready for a fun twist on the original. In this version, we've used a mini muffin tin for the perfect single serve minis. No cutting required! This pre-portioned Nanaimo treats are welcome at any get-together.

Ingredients
- 6 oz. (3/4 of 225-g pkg.) Baker's Semi-Sweet Chocolate, divided
- 1/2 cup butter, softened, divided
- 1 tsp. vanilla
- 1 cup graham crumbs
- 1/3 cup flaked coconut
- 1/3 cup chopped walnuts
- 1 egg
- 2 Tbsp. Bird's Custard Powder
- 3 Tbsp. milk
- 2 cups icing sugar
Preparation
Step 1
Heat oven to 350ºF.
Microwave 2 oz. chocolate and 3 Tbsp. butter in large microwaveable bowl on MEDIUM 2 min. or until butter is melted. Stir until chocolate is completely melted and mixture is well blended. Add vanilla; mix well. Stir in graham crumbs, coconut, nuts and egg; mix well.
Press crumb mixture onto bottoms of 24 mini muffin pan cups sprayed with cooking spray, adding about 1 Tbsp. crumb mixture to each cup. Bake 5 min. Cool completely.
Beat custard powder and milk in medium bowl with mixer until blended. Add 1/4 cup of the remaining butter; mix well. Gradually add sugar, beating well after each addition. Spoon over crusts, adding about 1/2 Tbsp. custard mixture to each crust. Press into even layers over crusts.
Microwave remaining chocolate and butter in microwaveable bowl on MEDIUM 2 to 3 min. or until butter is melted. Stir until chocolate is completely melted and mixture is well blended. Spread over custard layers, adding about 1 tsp. chocolate mixture to each cup.
Refrigerate 2 hours or until chilled.
