Ingredients

  • 2 cut up chicken breasts
  • 1/2 c olive oil
  • 3 minced garlic cloves
  • 1 c chopped parsley leaves or
  • celery leaves
  • 29 oz plus 14.5 whole tomatoes
  • salt/pepper/sugar
  • capellini

Preparation

Step 1

Soak cut up chicken in salted water. Pat dry. Brown in 1/2 c oi.l Add garlic towards the end of browning, just for a few seconds (don't want to burn.) Place chicken aside and sprinkle parsley over. In skillet used for browning add tomatoes and seasoning cooking for about 5 minutes. Put chicken back in, cover and cook slowly for about 1 1/2-2 hrs.
