Ingredients
- 1 cup rolled oats
- 1 cup low-fat sour cream or 1 cup yogurt (I used 2% greek)
- 1/2 cup oil
- 1/4 cup white sugar or honey
- 1/2 cup brown sugar
- 1 egg
- 1 cup flour (I used white wheat)
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons orange rind, grated * 3/4 cup cranberries, chopped
- 1/4 cup orange juice

Preparation
Step 1
1. Preheat oven to 400 degrees F.
2. Soak oats in yogurt or sourcream just enough to make it moist.
3. Sift dry ingredients into a bowl.
4. In a separate bowl, add oil, sugars, and egg.
5. Beat until well blended.
6. Gradually fold in dry ingredients.
7. Add chopped cranberries.
8. Put in greased muffin tins.
9. Bake for 20 minutes.
