- 8 ounces dark chocolate, finely chopped
- 3 cups unsweetened coconut milk
- 1 1/2 cups sugar
- 1/2 tsp vanilla extract

Put the chocolate into a large bowl and set aside. Put the coconut milk and sugar into a saucepan. Cook over low heat until hot, whisking occasionally to dissolve the sugar, but do not bring to a boil. Pour the hot coconut milk over the chocolate and let sit 4 to 5 minutes. Whisk the mixture until completely combined and no specks of chocolate remain. Pour into bowl and chill.
When cool, whisk in the vanilla. Pour into an ice cream maker and process, then transfer to a container and freeze until firm.
