  • 1/4 cup unsalted butter
  • 1 1/4 cups heavy cream
  • 1 vanilla bean, split lengthwise
  • pinch of kosher salt

Step 1

Put the sugar into a saucepan. Over medium-high heat, slowly melt and caramelize the sugar, stirring occasionally with a wooden spoon, until it has completely dissolved and turned a golden amber color and reaches 330F on a candy thermometer, 12 to 15 minutes. Using a whisk, carefully mix in the butter. When the butter is melted and combined, remove the caramel from the heat and gradually whisk in the cream. When all the cream is incorporated, scrape the vanilla beans out of the pod and into the caramel. Thoroughly whisk the beans into the caramel. Serve warm or at room temperature. Store in fridge up to a month.
