- 3 1/4 cups ruby port
- 1 cup sugar

Step 1
Put the port and sugar in a saucepan and bring to boil over high heat, whisking to dissolve the sugar. Reduce the heat to low and let simmer until the mixture has reduced by half or until the temperature reads 225F on a candy thermometer, 15 to 20 minutes.
remove from the heat and let cool slightly at room temperature before pouring over a vessel for storage.
