Tropical Snowball Cookies

I love how these turn out!! They are moist and chewy with the great tropical flavor of oranges and coconut. These add nice variety to a holiday cookie tray when mixed with other cookies that feature chocolate, a variety of nuts, and other shapes. Give these a try – you won’t regret it and you may even discover a new family favorite!

- 2 3/4 C. Homemade Holiday Cookie Mix
- 1/4 C. Reduced Sugar Sweet Orange Marmalade (I used Smucker’s)
- 1 large egg
- 1 t. vanilla extract
- 1 1/4 flaked coconut, divided

- 8 C. flour
- 4 C. sugar
- 4 t. baking powder
- 2 t. salt
- 2 2/3 C. butter, chilled
- Combine flour, sugar, baking powder, and salt in a very large bowl. Cut in butter with a pastry blender until the mixture resembles course meal. If not using within a week, store in an airtight contai

- Mix all the dry ingredients in a very large bowl. If you have a large food processor cube 1/2 of butter and place in food processor bowl. Put half of the dry ingredients mixture in and pulse until mix

Preparation
Step 1
1. Preheat oven to 375 degrees. coat baking sheet with non-stick cooking spray.
2. Combine the cookie mix, orange marmalade, egg, and vanilla in medium bowl using an electric mixer on low until a sticky dough forms.
3. Stir in 1 cup of flaked coconut.
Batter ready to shape into balls
4. Sprays palms of hand with non-stick cooking spray and shape teaspoonfuls of dough into balls and roll in remaining coconut.
Ready to bake
5. Place two inches apart on prepared baking sheets.
6. Bake 8-10 minutes or until light brown around the edges. Cool completely on cooling rack. Makes 3 dozen.
