Baracky Road Ice Cream

Ingredients
- 11 oz 70% dark chocolate, coarsely chopped, divided
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup sugar
- pinch of kosher salt
- 1 tsp vanilla extract
- 3/4 cup blanched, skinned, chopped hazelnuts
- 1 cup miniature marshmallows

Step 1
Place 7 ounces of the chocolate in a medium bowl and set aside. Put the cream, milk, sugar, and salt into a small saucepan and cook uncovered over medium heat, whisking occasionally to dissolve the sugar. Just before the mixture comes to a boil, remove from the heat. Pour the hot mixture over the chocolate and let sit for 5 minutes at room temperature. Whisk until the hot cream and chocolate are completely combined. Pour the mixture into a shallow pan or bowl and place in the refrigerator to chill completely.
When the mixture is cold, whisk in the vanilla. Pour into ice cream maker and process. During the last minute of processing, add in the hazelnuts, the remaining 4 ounces of chocolate, and the marshmallows. Transfer to a container and freeze until firm.
