Ingredients

  • Glaze, heat and stir until dissolved:
  • 1/2 C butter, softened
  • 1 C sugar
  • 2 large eggs
  • 2/3 C buttermilk
  • 1 medium lemon, grated peel
  • 2 C flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 C blueberries
  • 1 T flour
  • 3 T lemon juice
  • 1/4 C sugar

Preparation

Step 1

Cream butter and sugar together well. Beat in eggs 1 at a time. Add milk and peel; mix.

Measure flour, bkaing powder and salt in separate bowl. Stir together well. Add to butter; stir to just moisten.

Toss berries with flour. Add to batter, stirring gently and quickly. Turn into greased 9x5x3 loaf pan.

Bake in 350F oven for 1 1/2 hours until toothpick comes out clean. Spoon glaze over loaf. Cool 10 minutes then remove from pan.
